This is one of the most popular breakfast offerings at Adair Country Inn & Restaurant. Why? It is pure comfort food; soft, eggy, sweet and cinnamony. It is wonderful simpy served with confectioner's sugar sprinkled over it but keep a juy of real New Hampshire maple syrup nearby.

Yield: 6 servings

Ingredients

1 cup flour
3 tablespoons sugar
1/4 teaspooon salt
4 eggs
1 cup heavy cream
1 teaspoon vanilla
5 tablespoons melted butter
2 to 3 apples
2 tablespoons brown sugar
1/2 tablespoon ground cinnamon

Preheat the oven to 400F
To make the batter, mix the flour, sugar and salt together in a large bowl. Whisk in the eggs, cream, and vanilla. Add 3 tablespoons of the melted butter and stir to smooth out the batter.

Heat 9 or 10-inch ovenproof skillet over medium low heat. Spray the skillet with cooking spray of melt a small amount of butter in the skillet to oil it. Pour in the batter and allow it to begin to set while your prepare your apples.

Cut the apples into 4 segments and remove the core. Cut the segments into thin slices. Combine the brown sugar and cinnamon in a medium bowl. Add the apple slices and toss to coat with the sugar mixture. Layer the apple slices over the batter in a decorative way. Drizzle remaining butter over the slices. Bake the Clafouti until the center is firm, about 15 to 20 minutes. Cut into wedges and serve.
